Poached Pear Porridge

Makes 2 portions
For the liquid:
4 Pears
1/2 mug water
1 tbsp maple syrup
1/2 tsp lemon juice
1/2 tsp cinnamon
1 vanilla pod
For the porridge:
2 cups rolled oats
2 tbsp gingerbread almond butter
3 cups oat milk
1. Peel skin from pears, then halve and core
2. Add all ingredients to a pan and bring to a simmer
3. Place pears in liquid, cover and simmer on a low heat for 15 mins
4. While the pears are simmering, cook the porridge
5. Serve the porridge and top with the poached pears, some of the pear liquid and extra nut butter to taste!
Store pears in juice/ syrup in the fridge up to 5 days.
